How to Maintain your Starter

Daily Feedings

To keep your starter active, discard a portion of the starter and refresh it with equal amounts of flour and water every 24 hours (store it at room temperature).  For example: Using a clean jar, add 30 grams of your unfed starter + 30 grams water + 30 flour and mix thoroughly, discard the remaining unfed starter.  Set on the counter


When you are ready for baking within a day or two, it’s best to feed your starter twice daily by discarding a portion of the starter and refresh it with equal amounts of flour and water every 12 hours (stored at room temperature)


TIP: Instead of discarding your remaining starter each day, keep a "discard jar" in your refrigerator. You can find lots of delicious "discard recipes" to make homemade tortillas, pasta, crackers etc.


TIP: When you get comfortable with this process you may want to maintain smaller amounts of starter to avoid waste.
