Stitched SouRDough - Ready for Cold overnight Proofing

Pinch opposite sides of the dough on the side nearest you and cross them over each other in the center.  Move up slightly from the stitch and continue stitching the dough until you reach the opposite end of the loaf. The dough should have a pretty seam in the middle when you stitching is completed.
